Roasted-Garlic Mashed Potatoes with FAGE Total

A savory and thick mashed potato recipe.


3 lb bag baby red-skinned potatoes
1 cup whole milk
1 cup FAGE Total, FAGE Total 2% or FAGE Total 0%
4 tbsp butter
1 tsp salt
¼ tsp fresh ground black pepper
2 heads of garlic
2 tsp olive oil

Serves 6
  1. Preheat oven to 375 degrees.
  2. Place garlic on a sheet of tinfoil, drizzle with olive oil and wrap closed.
  3. Bake in oven for 45 minutes at 375 degrees until soft. Set aside to cool.
  4. Once cool, cut the tops off with a serrated knife and squeeze out garlic pulp into a small bowl.
  5. Fill a large pot with water and add ¼ cup of kosher salt and potatoes.
  6. Bring to a boil over high heat and reduce to simmer. Cook for 20 to 25 minutes until potatoes are tender, drain and return potatoes to pot.
  7. In a small pot, warm the milk and butter over medium heat until butter is melted, about 3 minutes.
  8. Pour milk mixture into the large pot over potatoes and mash together using a potato masher until desired consistency.
  9. Mix in the FAGE Total, roasted garlic, salt and pepper. Serve immediately.
