Raspberry Cosmo Poptail

A tasty summer cocktail… in popsicle form! This raspberry cosmo smoothie pop is the perfect refreshing, boozy treat you’ll want to make for all your summer parties. Add a splash of prosecco for a bubbly finishing touch.

2 cups raspberries, half reserved for garnish

½ cup ice

2 tablespoons honey

2 oz. vodka (optional)

Lemon rind twists

  1. In a blender, puree 1 cup of raspberries. Add yogurt, ice, honey, vodka and blend until smooth.
  2. Fill a small plastic cup and freeze for 30 minutes and then insert popsicle sticks before it freezes completely.
  3. Add Raspberry Cosmo Pop to a glass and add prosecco. Serve immediately garnished with lemon rind twist and raspberries.
  4. Mocktail alternative: Skip the vodka in the popsicle and swap the prosecco with a fruity seltzer water.
