FAGE Total Lobster Club with Watercress


1/4 cup red wine vinegar

1 large pinch saffron

1 tablespoon honey

1 cup FAGE Total 0%

2 cloves garlic, mashed to a paste

1/2 cup finely diced celery

1/4 cup finely diced red onion

Salt and freshly ground black pepper

1 ½ pounds fresh lobster meat, chopped

Thinly sliced green onion (may use)

Chopped fresh flat leaf parsley

Thinly sliced ripe beefsteak tomatoes

Watercress Bread

Unsalted butter

  1. Bring vinegar to a boil, add the saffron, remove from the heat and let steep for 10 minutes.
  2. Whisk together the FAGE Total, vinegar, garlic and honey in a large bowl and season with salt and pepper. Add the celery, onion and lobster meat and gently fold to combine.
  3. Add the parsley (and green onion, if using) and season with salt and pepper.
  4. Top lobster salad with lettuce and tomato, and alternate between pieces of buttered bread as desired.
