Yogurt-Filled Granola Cups

What better way to start your day than these cute homemade granola cups filled with creamy yogurt.

Ingredients

Granola Cups

Nonstick cooking spray

1 ½ cup old fashioned rolled oats

½ cup pecans, chopped

½ cup sunflower seeds

¼ cup hemp seeds

2 tablespoons brown sugar

2 tablespoons honey

1 tablespoon extra virgin olive oil

Pinch of salt

 

Yogurt Filling

2 cups FAGE Total 5%, FAGE Total 2% or FAGE Total 0%

2 tablespoons maple syrup

1 lemon zest

3 cups blueberries

Mint leaves

    Steps
  1. Preheat oven to 350 degrees F. Spray muffin tin with nonstick spray. Set aside.
  2. In a large bowl, mix oats, pecans, sunflower seeds, hemp seeds, brown sugar, honey, olive oil and salt. Press 2 heaping tablespoons in each well and press to cover the sides of the well. Bake for 12-15 minutes. Let cool for 10 minutes and remove cups from pan before it’s completely cooled off.
  3. In a medium bowl, mix yogurt and maple syrup. Fill each granola cup with yogurt mixture and top with blueberries, lemon zest and mint sprig.
