2 slices, whole grain bread
1 egg, boiled and sliced
¼ of avocado, pitted, peeled and thinly sliced
Handful of pea shoots
Handful of baby spinach
Yogurt Mustard Dressing
½ cup FAGE Total 5%, FAGE Total 2% or FAGE Total 0%
4 tablespoons whole grain mustard
1 tablespoon lemon juice
½ teaspoon paprika
Salt and pepper to taste
- In a small bowl whisk together yogurt, mustard, lemon juice, paprika, salt and pepper.
- Spread yogurt mustard dressing onto both pieces of bread. Add pea shoots on one side and spinach on the other. Top with avocado and egg slices and bring bread slices together, cut in half and enjoy.
- Optional: toast bread for an added crunch.
