New Recipe: Chicken Tortilla Soup with Sour Cream
Savory chicken tortilla soup made from scratch… YUM! Bold seasonings and rich flavor combine to make a hearty and satisfying dish. Top with a spoonful of FAGE Sour Cream to complete!
Ingredients
- 1 tablespoon olive oil
- 1 medium sized onion, chopped
- 3 garlic cloves, minced
- 2 chicken breasts, diced
- 1 jalapeno, seeded and diced
- 2 teaspoons chili powder
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1 (14.5 oz.) can crushed tomato
- 1 (14.5 oz.) can diced tomato with chili
- 3 cups of vegetable or chicken stock
- 1 (14.5 oz.) can black beans, washed and drained
- 1 cup corn
- 2 limes, juiced
- Salt and pepper to taste
Toppings:
- FAGE Sour Cream
- Tortilla chips
- Jalapeno, sliced
- Cheddar cheese, shredded
- Cilantro
- Lime wedges
Cook Time: 40 minutes
Steps
- In a large pot heat olive oil and add onion. Cook until translucent.
- Add garlic, chicken breast and jalapeno until chicken is cooked through.
- Add chili powder, cumin, paprika, crushed tomato, diced tomato with chili, stock, black beans, corn, and lime juice. Simmer for 20 minutes. Add extra salt and pepper to taste.
- Spoon into bowls and serve with sour cream, tortilla chips, jalapeno slices, cheese, cilantro and lime wedges.
