Glazed Fillet Of Pork With Suffolk Blue Cheese And FAGE Total Greek Yogurt


2 pork fillets

1 packet baby spinach

1/4 cup blue cheese, grated

1/2 cup FAGE Total 5%

2 tbsp fresh bread crumbs

Pinch of salt/pepper

2 tbsp vegetable oil

  1. Mix blue cheese, bread crumbs and FAGE Total Greek Yogurt together.
  2. Season pork fillet with salt and pepper, seal in a hot pan. Roast in a hot oven until slightly pink, leave to rest for 10 minutes.
  3. Wilt down spinach in a separate pan.
  4. Wilt down spinach in a separate pan.
  5. Place wilted spinach on top of plate, slice pork and arrange on top of spinach. Spoon yogurt mixture on top and glaze under a hot grill until golden brown.
