1 (29 ounce) can pumpkin puree
2/3 cup maple syrup
1/2 cup water
2 tablespoons lemon juice
2 teaspoons pumpkin pie spice
1/2 teaspoon ground cinnamon
Pinch of salt
2 cups FAGE Total 5%, 2%, or 0%
1/2 cup toasted chopped pecans
4 cinnamon stick
1 sprig mint
- In a large saucepan, stir and combine pumpkin puree, maple syrup, water, lemon juice, pumpkin pie spice, cinnamon, and salt, and boil over medium-high heat.
- As it bubbles, reduce heat to low and simmer uncovered for 20 minutes, stirring occasionally.
- Once puree is thickened, remove from heat and cool completely.
- Alternate layering parfait with Greek yogurt and pumpkin mixture. Garnish with pecans, cinnamon stick, and mint.
