Ingredients
LAMB CHOPS:
2.2 lbs lamb chops
Salt to taste
MARINADE:
½ cup extra-virgin olive oil
1 lemon, zested
1 garlic clove, finely chopped
1 tsp fresh oregano, finely chopped
1 tsp fresh thyme, finely chopped
1 tsp sweet paprika
1 tsp allspice
3 tbsp FAGE Total 5%, 2%, or 0%
1 pinch salt
Pinch of freshly ground black pepper
SAUCE:
2 cups FAGE Total 5%, 2%, or 0%
1 tomato, finely chopped
1 tsp fresh oregano, finely chopped
1 tsp fresh thyme, finely chopped
6 oz jar olive paste
1 tbsp extra-virgin olive oil

MARINADE:
Add the marinade ingredients to a large bowl and whisk to combine. Coat the lamb chops with the marinade and refrigerate for about 2 hours in the marinade.
Remove lamb chops from the refrigerator about 45 minutes before cooking. -
SAUCE:
In a bowl, mix all the sauce ingredients thoroughly to obtain a smooth sauce. -
LAMB CHOPS:
Add salt to taste, then barbecue or grill the lamb chops in a cast iron griddle for 4–5 minutes on each side, depending on the thickness. - Serve topped with the FAGE Total sauce, and garnish with your preference of mixed vegetables.
