Lamb Meatballs with Tzatziki

Ingredients

Tzatziki:

1 cup FAGE Total 0%, 2% or 5% or FAGE BestSelf Plain

1 medium cucumber, peeled, deseeded, and minced

1 clove garlic, minced

2 tablespoons lemon juice

1 tablespoon fresh mint, chopped

1 tablespoon fresh dill, chopped

Salt to taste

Meatballs:

1-pound ground lamb

1 small onion, minced or grated

¼ cup breadcrumbs or panko

1 large egg

2 cloves garlic, minced

½ cup fresh cilantro, chopped

2 teaspoons ground cumin

1 teaspoon ground coriander

1 teaspoon paprika

2 teaspoons salt

½ teaspoon pepper

Oil for cooking

Serve With:

Pita bread

Cucumber, diced (optional)

Tomato, diced (optional)

    Steps
  1. In a medium bowl, combine Greek yogurt, cucumber, garlic, lemon juice, mint, dill, and salt. Set aside while making meatballs.
  2. In a large bowl, combine lamb, onion, breadcrumbs, egg, garlic, cilantro, cumin, coriander, paprika, salt, and pepper. Mix well. Measure 2 tablespoons and roll into balls. Repeat with the remainder of the meat mixture.
  3. Heat a large skillet over medium-high heat, add oil and cook meatballs until cooked through, about 10 minutes. Serve immediately with Tzatziki, pita bread, cucumber, and tomato.
