Lettuce Wraps

A refreshing and light lunch or dinner option that’s guilt-free? Yes, please. Pile on the protein and flavor – these lettuce wraps are perfectly satisfying and fully dressed.



3 tablespoons olive oil

1 small red onion, finely diced

1-pound ground chicken

4 cloves of garlic, minced

2 teaspoons ginger, grated

4 tablespoons soy sauce

1 teaspoon sesame oil

Yogurt Dressing

1 cup FAGE Total 5%, FAGE Total 2% or FAGE Total 0%

2 cloves garlic

2 tablespoon lime juice

4 scallions

¼ cup mint

½ teaspoon black pepper

½ teaspoon salt                             

Wrap and Toppings

12 Boston Bibb/Butter lettuce leaves, cleaned and separated

1 cup carrots, shredded

1 avocado, pitted, peeled and cubed

½ mango, thinly sliced

½ watermelon radish or radish, thinly sliced

3 tablespoons crushed peanuts

Cilantro, for garnish

  1. Place a large skillet over medium-high heat. Add oil and sauté onion until translucent. Add chicken, garlic and ginger and cook until chicken is mostly cooked through. Add soy sauce and cook until chicken is thoroughly cooked through. Turn off heat and add sesame oil.
  2. In a food processor add yogurt, garlic, lime juice, scallions, mint, black pepper and salt. Blend until well incorporated.
  3. Lay out lettuce leaf and assemble by adding a spoonful of chicken, carrots, mango, avocado, peanuts and cilantro. Top with yogurt dressing and enjoy.
