Ingredients
1/4 cup red wine vinegar
1 large pinch saffron
1 tablespoon honey
1 cup FAGE Total 0%
2 cloves garlic, mashed to a paste
1/2 cup finely diced celery
1/4 cup finely diced red onion
Salt and freshly ground black pepper
1 ½ pounds fresh lobster meat, chopped
Thinly sliced green onion (may use)
Chopped fresh flat leaf parsley
Thinly sliced ripe beefsteak tomatoes
Watercress Bread

Steps
- Bring vinegar to a boil, add the saffron, remove from the heat and let steep for 10 minutes.
- Whisk together the FAGE Total, vinegar, garlic and honey in a large bowl and season with salt and pepper. Add the celery, onion and lobster meat and gently fold to combine.
- Add the parsley (and green onion, if using) and season with salt and pepper.
- Top lobster salad with lettuce and tomato, and alternate between pieces of buttered bread as desired.
