Southwestern Bowl with Vegetable Yogurt Sauce

This easy southwestern-style bowl isn’t complete without a big scoop of flavorful vegetable yogurt sauce. Pack to the rim with protein, vegetables, and grains – this bowl is sure to be a crowd-pleaser.

Ingredients

1 cup wild rice with chia seeds

1 small sweet potato, peeled and cut into pieces

1 cup canned black beans

1 avocado, cut in half and sliced

1 red, green, or yellow bell pepper, sliced

½ cup canned corn kernels

1 jalapeno, sliced

Cilantro sprig

Olive oil

Salt

 

Vegetable Sauce:

½ cup FAGE Total 5%, FAGE Total 2% or FAGE Total 0%

1 tablespoon parsley, finely chopped

1 tablespoon scallion, finely chopped

½ tablespoon basil, finely chopped

½ teaspoon garlic powder

½ teaspoon onion powder

Salt and pepper to taste

    Steps
  1. Cook rice per package directions. Set aside.
  2. In a small pan, add olive oil and cook sweet potato with salt and pepper.
  3. In a medium bowl, mix Greek yogurt, parsley, scallion, basil, garlic powder, onion powder, salt, and pepper. Set aside.
  4. Spoon half the wild rice into each bowl and top with sweet potato, black beans, avocado, pepper, corn, jalapeno, and cilantro. Top with Vegetable Sauce and serve immediately.
