Chicken Quesadilla with FAGE Sour Cream

Ingredients

2 tablespoons extra virgin olive oil

2-pounds boneless skinless chicken breast

1 tablespoon garlic powder

Salt and pepper

1 red bell pepper, seeded and diced

12 large flour tortillas

6 tablespoons butter

3 cups Mexican shredded cheese

    Steps
  1. Heat olive oil in a skillet over medium-high heat. Season chicken with garlic powder, salt and pepper. Sauté chicken for 4-5 minutes on each side. Cool down and slice or shred chicken.
  2. In the same pan, add pepper and sauté for 3-4 minutes.
  3. In another large pan, heat ½ tablespoon of butter over medium-high heat. Place flour tortilla in the pan, add cheese, chicken, and pepper. Add additional cheese and top with a second tortilla. Cook until bottom is golden brown.
  4. Flip quesadilla to the other side and continue cooking until the second side is also golden brown.
  5. Repeat with remaining tortillas and fillings.
  6. Cut into wedges and serve with sour cream.
