Ingredients
2 tablespoons extra virgin olive oil
2-pounds boneless skinless chicken breast
1 tablespoon garlic powder
Salt and pepper
1 red bell pepper, seeded and diced
12 large flour tortillas
6 tablespoons butter
3 cups Mexican shredded cheese

Steps
- Heat olive oil in a skillet over medium-high heat. Season chicken with garlic powder, salt and pepper. Sauté chicken for 4-5 minutes on each side. Cool down and slice or shred chicken.
- In the same pan, add pepper and sauté for 3-4 minutes.
- In another large pan, heat ½ tablespoon of butter over medium-high heat. Place flour tortilla in the pan, add cheese, chicken, and pepper. Add additional cheese and top with a second tortilla. Cook until bottom is golden brown.
- Flip quesadilla to the other side and continue cooking until the second side is also golden brown.
- Repeat with remaining tortillas and fillings.
- Cut into wedges and serve with sour cream.
