Cold Cucumber Soup

Ingredients

2 large cucumbers, halved, seeded, and coarsely chopped

1 ½ cups FAGE Total 0%, 2%, 5%, or BestSelf Plain, extra for garnish

½ cup water

3 tablespoons lime juice

2 green onions, chopped

2 garlic cloves, coarsely chopped

1/3 cup fresh basil

¼ cup fresh dill

¼ cup fresh parsley leaves

¼ cup extra virgin olive oil, extra for drizzling

1 tablespoon white wine vinegar

Salt and pepper to taste

    Steps
  1. Combine all ingredients in a blender and blend until smooth. Add more water if you desire a thinner consistency.
  2. Chill for at least 4 hours.
  3. Serve with extra cucumber slices, Greek yogurt, fresh herbs, and a drizzle of olive oil.
