Spring Peas & Yogurt Topped Toast

Ingredients

4 slices of bread of choice, toasted

½ cup FAGE Total 0%, 2%, 5% or FAGE BestSelf Plain

2 cups fresh peas

2 tablespoons lemon juice

2 tablespoons fresh dill, chopped

1 tablespoon extra-virgin olive oil

Salt and pepper to taste

Garnish:

Pea tendrils

Cracked pepper

Pickled red onion

Flaky sea salt

Red pepper flakes

    Steps
  1. Bring a small pot of water to a boil. Add peas and cook for 2-3 minutes or until peas turn bright green.
  2. Immediately drain the peas and add to an ice bath for 3 minutes. Drain the peas.
  3. In a small bowl, combine peas, lemon juice, dill, olive oil, salt, and pepper.
  4. Spread Greek yogurt on top of the toast and add peas with its juice. Garnish with pea tendrils, pickled red onion, cracked pepper, salt, and red pepper flakes to taste.
