1 cup pumpkin puree
2 cups FAGE Total 5%, FAGE Total 2% or FAGE Total 0%, or FAGE BestSelf Lactose Free Greek Yogurt, divided
1 teaspoon vanilla extract
½ cup powdered sugar, divided
1 teaspoon pumpkin pie spice
1 zest of a lemon
1 teaspoon lemon juice
1 cup gingersnaps, crushed
Pecan or hazelnuts for garnish (optional)
- In a medium size bowl, mix together pumpkin puree, 1 cup Greek yogurt, vanilla extract, ¼ cup of powdered sugar, and pumpkin spice.
- In another bowl, mix together the remaining cup of yogurt, remaining ¼ cup of powdered sugar, lemon zest, and lemon juice.
- Place pumpkin mixture on the bottom of the parfait cups. Add yogurt mixture and swirl together using a spoon. Add crushed gingersnaps and repeat the process until you reach the top of the parfait glass. Top with pecans or hazelnuts, lemon zest, and gingersnap.
