2 tablespoons white balsamic vinegar
2 tablespoons extra virgin olive oil
2 tablespoons honey, maple syrup, or agave
½ teaspoon garlic powder
Salt and pepper to taste
16-ounces fresh baby spinach
2 cups, strawberries, hulled and sliced
1 avocado, peeled, pitted and sliced
2 baby cucumbers, thinly sliced
2/3 cup sliced almonds, toasted
4-ounces feta, crumbled (optional)
¼ cup pickled red onions
- In a small bowl, whisk together yogurt, vinegar, oil, honey, garlic powder, salt, and pepper until smooth. Set aside.
- In a large salad bowl, combine spinach, strawberries, avocado, cucumbers, almonds, feta, and onions.
- Drizzle on yogurt balsamic dressing and serve immediately.
