Summer Squash and Tomato Salad with Chili-lime Yogurt Dressing

Ingredients

Chili-lime Yogurt Dressing Ingredients:

¼ cup extra virgin olive oil

¼ cup FAGE Total 0%, 2%, 5%, or BestSelf Plain

1 lime, zested

1 lime, juiced

1 garlic clove, minced

½ teaspoon chili powder

¾ teaspoon salt

¼ teaspoon pepper

 

Summer Squash and Tomato Salad Ingredients:

2 tablespoons extra virgin olive oil

1 small red onion, diced

2 garlic cloves, minced

1 medium zucchini, sliced

1 medium summer squash, sliced

3 ears of corn, kernels stripped

1 pint grape or cherry tomatoes, halved

¼ cup fresh basil, julienned

Salt and pepper to taste

    Steps
  1. In a small bowl, combine olive oil, Greek yogurt, lime zest, lime juice, garlic, chili powder, and salt and pepper. Set aside.
  2. Heat a large skillet over medium heat. Add olive oil and red onion and cook until the onions become slightly translucent. Add garlic, zucchini, and squash. Cook for an additional 5 minutes. Stir in corn and tomato and cook for 1 minute.
  3. Transfer onto a serving platter. Top with basil and drizzle the yogurt dressing.
  4. Toss and serve immediately.
