Ingredients
7 cups sweet potato, peeled and shredded
2 scallions, finely chopped
½ cup all-purpose flour
2 large eggs, lightly beaten
1 ½ teaspoon kosher salt
1 teaspoon garlic powder
¼ teaspoon ground black pepper
½ cup FAGE Sour Cream
Vegetable oil for the pan

Steps
- In a large bowl, mix together sweet potato, scallion, flour, eggs, salt, garlic powder, black pepper, and sour cream until well combined.
- Heat a large skillet on medium-high heat and add 1 tablespoon of oil. Spoon about ¼ cup of potato mixture and reduce heat to medium (you should be able to fit about 4 latkes). Cook until golden and flip to the other side.
- Transfer latkes to a baking sheet lined with paper towel to drain.
- Serve with extra sour cream and chives.
